Last fall, we took the first real step toward building our truffle farm—working with freshly cut logs and inoculating them with shiitake spawn.
Each log was drilled, filled, and sealed by hand. It’s a simple process, but one that requires patience and care—because what happens now determines everything that comes later.
Those same logs are now resting through winter, beginning the long process that (hopefully) leads to our first harvest this spring.
